6 min read·5 May 2026·

Restaurant evaluations cover reservation, welcome, ordering, service flow, food quality, billing and departure.

Consistency across shifts and locations is usually the biggest opportunity.

What to evaluate in a restaurant mystery shopping visit

A restaurant evaluation should follow the guest's journey from the first contact to the farewell, with clear, observable criteria at each step.

Reservation

  • Phone answered promptly with a clear greeting
  • Availability, special requests and policies explained
  • Confirmation sent by message or email

Arrival and welcome

  • Guest greeted within a set time
  • Reservation found quickly, table offered promptly
  • Seating appropriate to the party

Ordering

  • Menus provided, specials and allergens explained
  • Recommendations and suitable upselling
  • Order repeated back for accuracy

Service flow

  • Drinks and food delivered within target times
  • Correct dishes, served to the right guests
  • Check-back after the first bites

Food quality

  • Temperature, taste and presentation as per specification
  • Portion size consistent with the menu

Cleanliness

  • Tables, cutlery and glassware clean
  • Washrooms clean and stocked

Billing and departure

  • Bill presented promptly and accurately
  • Payment handled smoothly
  • Warm farewell and invitation to return

Delivery and takeaway

Delivery orders should be evaluated for accuracy, temperature, packaging, delivery time and communication. Many UAE restaurant groups now run separate delivery evaluation programmes alongside dine-in visits.
